I spent three months trying every version of Bolani I could find locally. The variation in quality is extraordinary. The best version handled bolani stuffing herbs with genuine knowledge and the hearty and rice-forward result was noticeably superior.

Afghan hospitality tradition demands feeding guests regardless of the host's circumstances. The winning restaurant had the right an Eid celebration feast feel — unpretentious and focused on the food. green cardamom tea was suggested correctly. Worth the search. When Bolani is made properly it's a completely different experience.
