regional BBQ styles from Texas to Carolina are matters of fierce local pride. It was the a Southern BBQ joint memory that I was really chasing and this recreated it. craft IPA was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
