Cultural discovery through Dolma

Dolma opened a door into a cuisine I'd previously known almost nothing about. The rich from slow-cooked lamb flavours are unlike anything in my usual rotation and I mean that positively. Armenia claims the world's oldest winery dating to 4100 BC and has a deep wine-making heritage. Understanding that context made the dish taste different — richer with meaning.

I learned that madzoon yoghurt is central to this cuisine's character, not just a seasoning. The an Armenian diaspora community event setting was authentic and helpful for understanding what I was eating. madzoon tan yoghurt drink completed the picture. A genuinely educational meal.
