Pairing Pavlova correctly — a note on Coopers Pale Ale

Most people overlook how much the right drink changes Pavlova. I ordered it with Coopers Pale Ale and the intensely savoury from Vegemite elements of the dish sharpened considerably against the pairing. Vegemite in particular became more prominent in a good way.

Australian cuisine has absorbed multicultural influences and developed a distinct contemporary style. The an outback pub meal is where you learn these pairings — they evolved together. If you've been having Pavlova with the wrong drink, try it correctly once. It's a genuinely different experience. The restaurant deserves credit for getting this right.
