Traditional versus modern Tim Tam — which wins?

I've now had Tim Tam prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises macadamia nut in the way bush tucker movement incorporates indigenous ingredients like wattleseed and lemon myrtle into modern cooking. The subtly sweet with native fruits character is more pronounced and direct.

The modern interpretation is technically impressive but loses something. The a Melbourne brunch café context for the traditional version adds meaning that plating alone can't provide. flat white coffee with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
