Cultural discovery through Qutab

Qutab opened a door into a cuisine I'd previously known almost nothing about. The fragrant and saffron-gilded flavours are unlike anything in my usual rotation and I mean that positively. Azerbaijani cuisine reflects Turkic, Persian, and Caucasian influences meeting at a historical crossroads. Understanding that context made the dish taste different — richer with meaning.

I learned that dried sour plums is central to this cuisine's character, not just a seasoning. The a Baku meykhana restaurant setting was authentic and helpful for understanding what I was eating. armudu black tea completed the picture. A genuinely educational meal.
