Underwhelming Api — expected more
I was looking forward to Api here based on the reputation. The reality was disappointing. The subtly spiced character that makes this dish special was muted — either from shortcuts with llajua chilli salsa or from scaling up production at the expense of quality.
Bolivia preserves some of the most ancient Andean food traditions including chuño freeze-drying which dates to pre-Inca times. The an indigenous community festival feast setting I was hoping for wasn't quite there either. cola morada was available but not suggested appropriately. I've had much better versions elsewhere. Two stars because the dish concept is sound; the execution let it down.
