Decent Api — nothing more, nothing less

Api at this place was fine. The earthy from Andean ingredients flavour was there but not distinguished. llajua chilli salsa was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Bolivia preserves some of the most ancient Andean food traditions including chuño freeze-drying which dates to pre-Inca times. The a traditional Andean home setting was generic rather than immersive. chicha de maíz was offered but not explained. If you're in the area and want Api it'll do. If you're going out of your way, look elsewhere.
