Holiday memory — Charquekan that transported me back
I first ate Charquekan on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the simple and honest quality I remembered. ají amarillo was handled correctly — something most restaurants here get slightly wrong.
Bolivia preserves some of the most ancient Andean food traditions including chuño freeze-drying which dates to pre-Inca times. It was the a La Paz salteñería morning memory that I was really chasing and this recreated it. api maize drink warm was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
