First time trying Salteñas — completely converted

I had never tried Salteñas before this visit and I wasn't sure what to expect. The earthy from Andean ingredients taste hit immediately and made sense of the dish in a way descriptions never quite do. charque dried llama meat is an ingredient I'd not encountered used quite like this before.

The a La Paz salteñería morning setting added something to the experience — this kind of food makes sense in that environment. Bolivia preserves some of the most ancient Andean food traditions including chuño freeze-drying which dates to pre-Inca times. My server recommended chicha de maíz alongside and it was exactly right. I've been telling everyone to try Salteñas. Outstanding first encounter.
