I ate Moqueca at three different restaurants in the same week to compare. The results were illuminating. The use of dried shrimp varied significantly — only one got it right. The robust and filling profile should be consistent but interpretation differs widely.

Brazilian cuisine reflects indigenous, Portuguese, and African culinary heritages in equal measure. The best version came from a Bahian seafood restaurant, which felt authentic. açaí bowl was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Moqueca is larger than you'd think.
