Traditional versus modern Bangers and Mash — which wins?
I've now had Bangers and Mash prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises mature Cheddar in the way British cuisine was shaped by the Empire, introducing curries and international ingredients into the national diet. The comforting and hearty character is more pronounced and direct.
The modern interpretation is technically impressive but loses something. The a Sunday pub lunch context for the traditional version adds meaning that plating alone can't provide. dry cider with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
