Traditional versus modern Full English Breakfast — which wins?
I've now had Full English Breakfast prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises malt vinegar in the way pub food culture has undergone a renaissance in the gastropub era. The rich and savoury character is more pronounced and direct.
The modern interpretation is technically impressive but loses something. The a traditional seaside chippy context for the traditional version adds meaning that plating alone can't provide. a glass of claret with Sunday roast with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
