Roast Beef opened a door into a cuisine I'd previously known almost nothing about. The subtly sweet with caramelised elements flavours are unlike anything in my usual rotation and I mean that positively. British cuisine was shaped by the Empire, introducing curries and international ingredients into the national diet. Understanding that context made the dish taste different — richer with meaning.

I learned that HP sauce is central to this cuisine's character, not just a seasoning. The a country house hotel setting was authentic and helpful for understanding what I was eating. English Breakfast tea completed the picture. A genuinely educational meal.
