Traditional versus modern Roast Beef — which wins?
I've now had Roast Beef prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises mature Cheddar in the way British cuisine was shaped by the Empire, introducing curries and international ingredients into the national diet. The deeply satisfying character is more pronounced and direct.
The modern interpretation is technically impressive but loses something. The a traditional seaside chippy context for the traditional version adds meaning that plating alone can't provide. a glass of claret with Sunday roast with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
Roast Beef
