Traditional versus modern Sticky Toffee Pudding — which wins?

I've now had Sticky Toffee Pudding prepared traditionally and in a modern interpretation. Both are interesting. The traditional version emphasises malt vinegar in the way British cuisine was shaped by the Empire, introducing curries and international ingredients into the national diet. The subtly sweet with caramelised elements character is more pronounced and direct.

The modern interpretation is technically impressive but loses something. The a traditional seaside chippy context for the traditional version adds meaning that plating alone can't provide. real ale with the traditional version made more sense than with the modern. Traditional wins, but the modern is worth trying once.
