I had never tried Danbauk before this visit and I wasn't sure what to expect. The complex and earthy taste hit immediately and made sense of the dish in a way descriptions never quite do. lemongrass is an ingredient I'd not encountered used quite like this before.

The a mohinga street stall at dawn setting added something to the experience — this kind of food makes sense in that environment. laphet fermented tea leaf salad is a uniquely Burmese ingredient used in salads and as a stimulant snack. My server recommended toddy palm juice alongside and it was exactly right. I've been telling everyone to try Danbauk. Outstanding first encounter.
