I made Khauk Swè Thohk for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The warming with turmeric profile was the main talking point — no one had quite experienced fish paste ngapi used that way before.

mohinga fish noodle soup is considered the national dish and eaten as breakfast across the country. I explained the a mohinga street stall at dawn context as I served it which helped people appreciate it fully. toddy palm juice was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
