I grew up eating Mont Di and have strong opinions shaped by memory. The version here triggered that recognition in the first bite — the savoury and slightly sour was right, fermented tea leaves laphet was handled the way it should be.
laphet fermented tea leaf salad is a uniquely Burmese ingredient used in salads and as a stimulant snack. Growing up it was always a mohinga street stall at dawn, which shaped my reference point entirely. fresh lime soda alongside it is the only way it makes sense to me. It's hard to be objective about food you have emotional history with, but objectively: this is very good.
