Cooking class experience — learning Ohno Khao Swè properly

I took a cooking class specifically to learn how to make Ohno Khao Swè correctly. The instructor explained why lemongrass is used the way it is — something I'd never understood from just eating it. The pungent and fermented result when you make it yourself is different.

laphet fermented tea leaf salad is a uniquely Burmese ingredient used in salads and as a stimulant snack. We learned how a mohinga street stall at dawn shapes the way this dish is eaten. The class ended with the meal and a glass of toddy palm juice. I've made it three times since and each time it improves. Highly recommend the cooking class approach.
