Cultural discovery through Lok Lak
Lok Lak opened a door into a cuisine I'd previously known almost nothing about. The lightly sweet and fragrant flavours are unlike anything in my usual rotation and I mean that positively. prahok is a uniquely Cambodian ingredient that foreigners find challenging but locals consider essential. Understanding that context made the dish taste different — richer with meaning.
I learned that prahok fermented fish paste is central to this cuisine's character, not just a seasoning. The a village feast during festival season setting was authentic and helpful for understanding what I was eating. Angkor beer completed the picture. A genuinely educational meal.
