Cultural discovery through Nom Banh Chok

Nom Banh Chok opened a door into a cuisine I'd previously known almost nothing about. The fresh with lemongrass flavours are unlike anything in my usual rotation and I mean that positively. Cambodian cuisine shares roots with Thai and Vietnamese cooking but has its own distinct identity shaped by Khmer culture. Understanding that context made the dish taste different — richer with meaning.

I learned that banana blossom is central to this cuisine's character, not just a seasoning. The a village feast during festival season setting was authentic and helpful for understanding what I was eating. Angkor beer completed the picture. A genuinely educational meal.
