I ate Pleah Sach Ko at three different restaurants in the same week to compare. The results were illuminating. The use of kaffir lime varied significantly — only one got it right. The lightly sweet and fragrant profile should be consistent but interpretation differs widely.

prahok is a uniquely Cambodian ingredient that foreigners find challenging but locals consider essential. The best version came from a village feast during festival season, which felt authentic. palm wine was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Pleah Sach Ko is larger than you'd think.
