Holiday memory — Peameal Bacon that transported me back

I first ate Peameal Bacon on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the comforting and familiar quality I remembered. Arctic char was handled correctly — something most restaurants here get slightly wrong.

poutine emerged from Quebec rural diners in the 1950s and became Canada's most internationally recognised dish. It was the a sugar shack cabane à sucre memory that I was really chasing and this recreated it. Nanaimo bar dessert was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
