I ate Curanto at three different restaurants in the same week to compare. The results were illuminating. The use of shellfish from Patagonia varied significantly — only one got it right. The fresh from the sea profile should be consistent but interpretation differs widely.

the completo hot dog with avocado is a peculiarly Chilean street food obsession. The best version came from a Patagonian lamb restaurant, which felt authentic. Cristal lager was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Curanto is larger than you'd think.
