Cultural discovery through Mote con Huesillo
Mote con Huesillo opened a door into a cuisine I'd previously known almost nothing about. The smoky and herbal flavours are unlike anything in my usual rotation and I mean that positively. Chilean cuisine reflects the extraordinary length of the country with Pacific seafood, Andean ingredients, and Patagonian lamb all defining different regions. Understanding that context made the dish taste different — richer with meaning.
I learned that mote wheat is central to this cuisine's character, not just a seasoning. The a Patagonian lamb restaurant setting was authentic and helpful for understanding what I was eating. Carménère completed the picture. A genuinely educational meal.
