Decent Pastel de Choclo — nothing more, nothing less

Pastel de Choclo at this place was fine. The smoky and herbal flavour was there but not distinguished. Carménère wine was present in the right quantities but without the care that makes the difference. You can taste when something is being made to a formula.

Chilean cuisine reflects the extraordinary length of the country with Pacific seafood, Andean ingredients, and Patagonian lamb all defining different regions. The a Valparaíso seafood market setting was generic rather than immersive. Carménère was offered but not explained. If you're in the area and want Pastel de Choclo it'll do. If you're going out of your way, look elsewhere.
