Honest verdict on Ajiaco — good but not exceptional

Ajiaco here was solidly made — richly textured without anything to complain about. chicharrón pork rinds was present and handled reasonably. But something was missing from the depth that this dish should have.

Colombian cuisine varies dramatically between the coastal Caribbean, Andean, and Amazonian regions. The an Antioquia bandeja paisa restaurant atmosphere was pleasant enough. lulada lulo fruit drink was available and a good suggestion. For a reliable version of Ajiaco this works. For an exceptional one, I'd keep looking. Three stars.
