I spent three months trying every version of Cuban Sandwich I could find locally. The variation in quality is extraordinary. The best version handled plantain with genuine knowledge and the citrusy from mojo result was noticeably superior.

paladares are privately owned Cuban restaurants that developed as an alternative to state food service. The winning restaurant had the right a Havana paladar restaurant feel — unpretentious and focused on the food. Cristal beer was suggested correctly. Worth the search. When Cuban Sandwich is made properly it's a completely different experience.
