I spent three months trying every version of Lechón Asado I could find locally. The variation in quality is extraordinary. The best version handled sofrito tomato base with genuine knowledge and the citrusy from mojo result was noticeably superior.

Cuban cuisine reflects Spanish, African, and Caribbean indigenous influences. The winning restaurant had the right a family Sunday lechón feel — unpretentious and focused on the food. guarapo sugarcane juice was suggested correctly. Worth the search. When Lechón Asado is made properly it's a completely different experience.
