Moros y Cristianos opened a door into a cuisine I'd previously known almost nothing about. The earthy and hearty flavours are unlike anything in my usual rotation and I mean that positively. paladares are privately owned Cuban restaurants that developed as an alternative to state food service. Understanding that context made the dish taste different — richer with meaning.
