Finding the best Ropa Vieja in the city — a personal search
I spent three months trying every version of Ropa Vieja I could find locally. The variation in quality is extraordinary. The best version handled slow-roasted pork with genuine knowledge and the citrusy from mojo result was noticeably superior.
paladares are privately owned Cuban restaurants that developed as an alternative to state food service. The winning restaurant had the right a Havana paladar restaurant feel — unpretentious and focused on the food. Cristal beer was suggested correctly. Worth the search. When Ropa Vieja is made properly it's a completely different experience.
