Cultural discovery through Ropa Vieja

Ropa Vieja opened a door into a cuisine I'd previously known almost nothing about. The citrusy from mojo flavours are unlike anything in my usual rotation and I mean that positively. Cuban cuisine reflects Spanish, African, and Caribbean indigenous influences. Understanding that context made the dish taste different — richer with meaning.
