I spent three months trying every version of Tostones I could find locally. The variation in quality is extraordinary. The best version handled black beans with genuine knowledge and the earthy and hearty result was noticeably superior.

Cuban cuisine reflects Spanish, African, and Caribbean indigenous influences. The winning restaurant had the right a roadside food stall feel — unpretentious and focused on the food. Cristal beer was suggested correctly. Worth the search. When Tostones is made properly it's a completely different experience.
