I grew up eating Bramboráky and have strong opinions shaped by memory. The version here triggered that recognition in the first bite — the malty from beer braises was right, pickled vegetables was handled the way it should be.

Czech cuisine is inseparable from beer culture, one of the world's highest per-capita consumption nations. Growing up it was always a Prague pub restaurant, which shaped my reference point entirely. slivovitz plum brandy alongside it is the only way it makes sense to me. It's hard to be objective about food you have emotional history with, but objectively: this is very good.
