Street food Goulash — the authentic version
The best Goulash I've ever had came from a street stall, not a restaurant. The rich and filling intensity was completely different — more direct and uncompromised. pickled vegetables was used without hesitation, the way it should be.
Czech cuisine is inseparable from beer culture, one of the world's highest per-capita consumption nations. The a ski resort lunch setting meant eating standing up or on a low stool, which is how this food is supposed to be encountered. Moravian wine was sold right next to it.
