I spent three months trying every version of Vepřo-knedlo-zelo I could find locally. The variation in quality is extraordinary. The best version handled bread dumplings with genuine knowledge and the hearty and deeply savoury result was noticeably superior.

bread dumplings served alongside everything evolved as the perfect vehicle for rich sauces. The winning restaurant had the right a ski resort lunch feel — unpretentious and focused on the food. slivovitz plum brandy was suggested correctly. Worth the search. When Vepřo-knedlo-zelo is made properly it's a completely different experience.
