I went in with low expectations — I'd had mediocre versions before. What I found was Æbleskiver made with real commitment to Nordic berries and technique. The clean and fermented result was more complex and satisfying than anything I'd had before.

Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. The a traditional Sunday brunch was exactly right for this kind of eating. aquavit was offered as the natural choice and it elevated everything.
