Cultural discovery through Æbleskiver

Æbleskiver opened a door into a cuisine I'd previously known almost nothing about. The clean and fermented flavours are unlike anything in my usual rotation and I mean that positively. Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. Understanding that context made the dish taste different — richer with meaning.

I learned that rye bread rugbrød is central to this cuisine's character, not just a seasoning. The a Noma-inspired New Nordic restaurant setting was authentic and helpful for understanding what I was eating. aquavit completed the picture. A genuinely educational meal.
