Finding the best Æbleskiver in the city — a personal search

I spent three months trying every version of Æbleskiver I could find locally. The variation in quality is extraordinary. The best version handled brown butter with genuine knowledge and the bright and pickled result was noticeably superior.

Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. The winning restaurant had the right a Noma-inspired New Nordic restaurant feel — unpretentious and focused on the food. Danish lager was suggested correctly. Worth the search. When Æbleskiver is made properly it's a completely different experience.
