I spent an afternoon making Frikadeller from scratch following a traditional recipe. Getting rye bread rugbrød right was the main challenge — it's not as straightforward as it looks. The buttery and rich result was rewarding once I got it right.

Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. I served it with æblemost apple juice as the recipe suggested and the pairing made sense. It took longer than I expected but the outcome was genuinely satisfying. Making Frikadeller yourself gives you a new appreciation for what goes into it at a restaurant.
