I ate Koldskål at three different restaurants in the same week to compare. The results were illuminating. The use of pickled herring varied significantly — only one got it right. The buttery and rich profile should be consistent but interpretation differs widely.

the julefrokost Christmas lunch is a major social event with traditional dishes strictly observed. The best version came from a traditional Sunday brunch, which felt authentic. Danish lager was offered at all three but only one knew how to serve it properly. The gap between mediocre and excellent Koldskål is larger than you'd think.
