Holiday memory — Koldskål that transported me back
I first ate Koldskål on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the clean and fermented quality I remembered. rye bread rugbrød was handled correctly — something most restaurants here get slightly wrong.
Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. It was the a Noma-inspired New Nordic restaurant memory that I was really chasing and this recreated it. cold buttermilk was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
