Best Stegt Flæsk I've had — and I've tried a few
Having eaten Stegt Flæsk at several restaurants over the past year, I can say this version is the best. The bright and pickled quality is more pronounced here than anywhere else I've tried. rye bread rugbrød is handled with real knowledge — you can taste the difference.
This is proper a traditional Sunday brunch cooking, not an adaptation for foreign tastes. aquavit was the obvious choice and the combination was perfect. Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. Would return for this dish alone.
