I made Stegt Flæsk for eight guests who had varying familiarity with the cuisine. Every single person asked for the recipe. The bright and pickled profile was the main talking point — no one had quite experienced pickled herring used that way before.

Danish New Nordic cuisine movement redefined fine dining globally in the 2000s. I explained the a Noma-inspired New Nordic restaurant context as I served it which helped people appreciate it fully. æblemost apple juice was what I offered alongside and it worked perfectly. Excellent dinner party dish — impressive without being inaccessible.
