You can taste history in Ceviche if you know what to look for. Ecuador's position on the equator gives it extraordinary biodiversity of ingredients from coast, highlands, and Amazon. The bright and satisfying character reflects those layers — mote hominy doesn't appear by accident; it came from a specific tradition.

The a traditional home lunch setting made sense of it. You understand the food differently when the context is right. chicha de jora alongside is part of that story. Some food is just fuel. Ceviche, properly made, is something more. This version told the story well.
