Holiday memory — Ceviche that transported me back
I first ate Ceviche on a trip five years ago and have been searching for a version this good ever since. This restaurant finally delivered the earthy from corn quality I remembered. culantro was handled correctly — something most restaurants here get slightly wrong.
Ecuador's position on the equator gives it extraordinary biodiversity of ingredients from coast, highlands, and Amazon. It was the a Guayaquil ceviche bar memory that I was really chasing and this recreated it. canelazo hot cinnamon drink was offered and brought the whole experience together. Some dishes are attached to a time and place. This one finally restored that attachment.
