Honest verdict on Encebollado — good but not exceptional

Encebollado here was solidly made — bright and satisfying without anything to complain about. choclo corn was present and handled reasonably. But something was missing from the depth that this dish should have.

llapingachos potato cakes are a highland staple tied to Andean agricultural tradition. The a Guayaquil ceviche bar atmosphere was pleasant enough. chicha de jora was available and a good suggestion. For a reliable version of Encebollado this works. For an exceptional one, I'd keep looking. Three stars.
