Most people overlook how much the right drink changes Fanesca. I ordered it with Club beer and the subtly spiced and herbal elements of the dish sharpened considerably against the pairing. culantro in particular became more prominent in a good way.

Ecuador's position on the equator gives it extraordinary biodiversity of ingredients from coast, highlands, and Amazon. The a Guayaquil ceviche bar is where you learn these pairings — they evolved together. If you've been having Fanesca with the wrong drink, try it correctly once. It's a genuinely different experience. The restaurant deserves credit for getting this right.
