Honest verdict on Locro de Papa — good but not exceptional

Locro de Papa here was solidly made — earthy from corn without anything to complain about. aji criollo was present and handled reasonably. But something was missing from the depth that this dish should have.

Ecuador's position on the equator gives it extraordinary biodiversity of ingredients from coast, highlands, and Amazon. The a Quito mercado central atmosphere was pleasant enough. chicha de jora was available and a good suggestion. For a reliable version of Locro de Papa this works. For an exceptional one, I'd keep looking. Three stars.
